Preheat oven to 375 degrees.
If making 4 colors of dough, get out 4 medium bowls.In a larger (5th) bowl, combine the mashed avocado and Greek yogurt to make 1cup of combined avo yogurt mix. Then divide it out into ¼ cup portions into the 4 medium bowls. Add your 4, 1 tsp color powders into each medium bowl.
Add ½ cup self-rising flour into each of the 4 medium bowls.
Stir each with a spoon until combined. Will be crumbly at first. Keep mixing, then pour onto a cutting board and knead dough with hands until it comes together to form a dough. Repeat for all 4 colors / doughs.
Take some of each dough and roll them into long snake-like pieces and form small circles to make your mini-bagels. If dough is too wet, add more flour. If dough is too dry, add a bit of water or oil on your hands.
Lay on a baking sheet with room between them. Brush on your egg-wash so they get a nice sheen when baking. Bake for 20 – 22 min.
