Crispy Oven Fries with Honey Mustard Dipping Sauce

Ingredients
  

  • 2 to 3 russet potatoes
  • 2 Tbsp avocado oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp flaky sea salt
  • 1 tsp fresh chopped chives optional
For the honey mustard dipping sauce
  • 1/4 cup yellow mustard
  • 1/4 cup honey
  • 2 Tbsp dijon mustard
  • 1 Tbsp mayonnaise
  • 1 Tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 425 degrees.
  2. Slice potatoes into thin strips.
  3. Place in a large bowl and drizzle with avocado oil, salt, and pepper and toss to combine and coat thoroughly.
  4. Divide potatoes onto TWO parchment lined baking sheets and spread into a single layer making sure no potatoes are touching.
  5. Bake for 30-35 minutes until potatoes are crisp, carefully flipping once if necessary.
  6. While potatoes bake, combine yellow mustard, honey, dijon, mayo, lemon juice, salt, and pepper in a bowl and whisk until smooth.
  7. -Finish fries with a sprinkle of flakey sea salt and fresh chives.
