Preheat oven to 425 degrees.
Slice potatoes into thin strips.
Place in a large bowl and drizzle with avocado oil, salt, and pepper and toss to combine and coat thoroughly.
Divide potatoes onto TWO parchment lined baking sheets and spread into a single layer making sure no potatoes are touching.
Bake for 30-35 minutes until potatoes are crisp, carefully flipping once if necessary.
While potatoes bake, combine yellow mustard, honey, dijon, mayo, lemon juice, salt, and pepper in a bowl and whisk until smooth.
