Roasted Golden Beet Hummus

Servings: 6 servings

Ingredients
  

  • 1.5 medium golden beets roasted*
  • 1/2 cup tahini
  • 15 oz chickpeas drain, but reserve the liquid
  • 2 cloves garlic minced
  • 1/2 tsp curcumin powder (or turmeric)
  • 3 tbsp reserved chickpea liquid or more depending on desired consistency
  • 1/2 cup olive oil
  • 2 tbsp Thai chile wing sauce

Method
 

  1. Combine all ingredients in a food processor. Blend until smooth. Serve with crackers or pita.

Notes

*Peel and slice the golden beets, then roast them on a sheetpan with a bit of olive oil and sea salt for 25 minutes at 425 degrees F.
