Caramel Apple Olive Oil Cake

I first made this cake back in 2019, and I can still say without a shadow of a doubt: THIS IS <still> THE BEST CAKE I’VE EVER MADE!

Deliciously moist, caramel-covered, and perfect for autumn (my favorite season AND my daughter’s middle name! šŸ‚šŸ„°). I’m so excited that I’ll be making this cake for all my #TeamNosh gals at our upcoming retreat in Washington state!

Caramel Apple Olive Oil Cake

Servings: 8 servings

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 Autumn Glory apples
  • 1 tsp vanilla extract
  • 1-2 tsp cinnamon
  • 3/4 cup olive oil
  • 1/2 cup unsweetened almondmilk or sub milk of choice
  • 3 eggs
  • 1 cup coconut sugar or sub raw cane sugar
For Topping
  • 1 cup caramel sauce
  • 1/3 cup chopped honey roasted pecans

Equipment

  • 1 bundt pan
  • 1 potato masher or immersion hand blender

Method
 

  1. Preheat the oven to 350 degrees.
  2. Get out 3 mixing bowls.
  3. In the largest mixing bowl, combine the dry ingredients: flour, baking powder, and sea salt. Stir and then set aside.
  4. Boil the diced apples in about 1 cup of water on medium high for approximately 20 minutes. If all the water evaporates, add a little more into the pan. Once cooked/softened, use a potato masher to smash them (or use aknife to dice even more finely).
  5. In a smaller mixing bowl, combined the cooked apples with the olive oil, vanilla, and almondmilk.
  6. In a third bowl, combine the eggs and sugar. Using a hand mixer, mix on medium-high for 2 – 3 minutes. Then, pour the egg mixture into the apple mixture. Stir. Then, pour the wet mixture into the dry mixture and stir until just combined. Do not over stir.
  7. Pour the batter into a greased bundt pan, then bake for 45minutes.
  8. Once theĀ cakeĀ is finished, let it cool on the counter for 20 minutes. Then, flip it over onto a parchment linedĀ cakeĀ plate. Drizzle the caramel over theĀ cake. Then, sprinkle on the chopped pecans. Enjoy!
