Avocado Galaxy Bagels
๐ฅ These avocado galaxy bagels are OUT OF THIS WORLD good! ๐๐๐ As kids get older, they eat less fruits and vegetables, and young adults only get half of their recommended amounts. Get more by including avocados as a dip, in smoothies, or as a topping on tacos, sandwiches, and soupsโฆ (or in baked goods โ like these galaxy bagels or chocolate muffins).
โ Serve them for breakfast with cream cheese or butter.
๐ฑ Or make them into little mini bagelwiches for the lunchbox like I did here โ with turkey, romaine, and you guessed it: a couple slices of yummy avocado!
Also in the lunchbox: fresh berries and pretzels. ๐ซ๐ฅจ
PS. The colors are all-natural, made with fruit and veggie powders and are completely optional: (spirulina, black carrot powder, black cocoa, and beetroot). ๐ค๐ฅ
- 2 cups self-rising floor divided
- 1 large avocado mashed, ~1/2 cup
- 1/2 cup Greek yogurt
Optional dye / colors
- 1 tsp spirulina
- 1 tsp black carrot powder
- 1 tsp black cocoa powder
- 1 tsp beetroot powder
Preheat oven to 375 degrees.
If making 4 colors of dough, get out 4 medium bowls.In a larger (5th) bowl, combine the mashed avocado and Greek yogurt to make 1cup of combined avo yogurt mix. Then divide it out into ยผ cup portions into the 4 medium bowls. Add your 4, 1 tsp color powders into each medium bowl.
Add ยฝ cup self-rising flour into each of the 4 medium bowls.
Stir each with a spoon until combined. Will be crumbly at first. Keep mixing, then pour onto a cutting board and knead dough with hands until it comes together to form a dough. Repeat for all 4 colors / doughs.
Take some of each dough and roll them into long snake-like pieces and form small circles to make your mini-bagels.ย If dough is too wet, add more flour. If dough is too dry, add a bit of water or oil on your hands.
Lay on a baking sheet with room between them. Brush on your egg-wash so they get a nice sheen when baking. Bake for 20 โ 22 min.
