Tree-themed Holiday Breakfast: Two Ways

Adorable holiday tree-themed breakfasts? Check.

In the hustle and bustle of the holiday season craziness, we try to keep our breakfast and supplement routine as consistent as possible. Usually Babycakes takes her vitamins with a hearty breakfast and I take mine after my boosted coffee.

Today we’re sharing not one, but TWO holiday breakfast ideas that your kids are sure to love!

Top plate:

  • Adorable Christmas Tree made out of a slice of Bruschetta Frittata (recipe below) with a pretzel stick for the trunk and a bell pepper star to adorn the top of the tree.
  • Fresh raspberries
  • Single serving of SmartyPants Kids formula gummies

Bottom plate:

  • Toast with apple butter and sprinkles in the shape of a tree (just use a cookie cutter and add the sprinkles inside of it, then remove)
  • Autumn Glory apple slices

This frittata (not a quiche since there is no crust) is sooooooooo delish! Bruschetta ground chicken, parmesan cheese, fresh tomatoes, and sauteed spinach give it such a unique flavor that both kiddos and adults will love! And it’s so easy to make it into a tree-shape for the kiddos (just slice off the top 2/3rds of one of your slices). Grab the full recipe below!

Bruschetta Frittata

an Italian inspired crustless quiche
Servings 6


  • 1 pie pan


  • 9 eggs
  • 1 cup unsweetened almondmilk or sub regular milk
  • 1 cup shredded reduced fat mozzarella cheese
  • 16 ounces Bruschetta Ground Chicken by MightySparkFoods
  • 1 Tbsp basil paste sold in the refrigerated produce section
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups spinach or more if you want more greens
  • 1 tsp minced garlic
  • 1/2 cup diced tomatoes


  • Preheat the oven to 375 degrees.
  • Cook the ground chicken over medium heat on the stovetop for approximately 5 minutes, until no pink remains and it's cooked through. Set aside.
  • Saute the spinach and garlic together for 3-4 minutes to soften. It should be vibrant and green, not browned.
  • In a large mixing bowl, add the eggs and milk together and whisk until combined.
  • Then stir in all other ingredients, including the cooked ground chicken and sautee d spinach.
  • Pour into a greased pie pan.
  • Cook for 60-70 minutes until frittata is completely set and does not jiggle in the middle. Check every few minutes after 60.
